Some Facts and History: Bagels have existed for over 400 years. Named for the German word "beugel", meaning "a round loaf of bread", the bagel is traditionally believed to bring good luck and long life. The first printed mention of bagels may be found in the Community Register of Cracow, Poland, in which bagels are sanctioned as an appropriate gift for any women in childbirth. Bagels are made from the finest and purest ingredients. Basically, they contain high protein flour, salt, sugar, malt and yeast. Spices, egg, or coloring are added according to the flavor. Containing no oils, fats or preservatives, bagels are one of the original health foods. Bagel making is a relatively simple process. After being kneaded, shaped and permitted to rise, bagels are boiled for several minutes to remove most of the starch and prevent burning in the very hot oven in which they are baked. Bagels are available in a number of varieties, including egg, raisin, onion, salted and pumpernickel flavors; teething bagels (tiny sizes for tiny mouths); onion sticks and bialies (flattened holeless rolls).
